My budget will not allow for this all the time, but when I want to pamper myself, I will buy halibut or Mahi and adorn it with all my favorite cut up fruits. It is to die for. I The topping is always different, depending on what is freshest in the produce department.


This dish posted above is fresh wild caught Alaskan halibut. (Robert caught this fresh three days ago on his fishing trip in Alaska)  I dipped the meat in egg, then coated with a mixture of crumbled saltine crackers and breadcrumbs. I topped the fish with a pineapple salsa (from Harmon’s), mixed with a fresh cut up peach and finished with lemon juice, diced almonds, cashews, and raspberries. YUM! I am so darn organic. Everything I buy is organic, including the side of beets which I cooked in a steamer so as not to cook out the nutrition. P.S. The plate is from Rosanna, my favorite designer of plates.
